Mountain Tree Liquor Honey from the Carpathian Mountains:

Our bees produce the Mountain Tree Liquor Honey from honeydews collected from forest trees, including fir, oak, and beech, during times of the year and in locations where nectar from flowers is unavailable. Known locally as ‘manna ’, it has a strong, dark muscovado sugar taste and aroma with spicy overtones. Honeydew originates from the sugar-rich sap that feeds the tree. It is made in the leaves using mineral-rich water brought up from the roots combined with oxygen and energy from the sun, and incorporates a range of nutrients not found in flower nectar.

Pairing: Allows the most extravagant uses.

Mountain Pine Tree Honey from the Carpathian Mountains:

The bees produce our Mountain Pine Tree Honey by collecting honeydews from pines during times of the year and in locations where nectar from flowers is not available. It has a strong, sweet pine taste and aroma with spicy overtones. Honeydew originates from the sugar-rich sap that feeds the tree. It is made in the leaves using mineral-rich water brought up from the roots combined with oxygen and energy from the sun, and incorporates a range of minerals, enzymes, and amino acids not found in flower nectar.

Pairing: Pairs very well with white, creamy cheeses, Greek yoghurt, bread and ice cream. You can take a spoonful as needed to combat winter ailments.

Artichoke Honey – from the Carpathian Mountains:

Our Artichoke Honey is made from the nectar of wild-blooming artichoke thistles found in the Carpathian Mountains. Harvested only once every 2-3 years by our artisan beekeepers, this honey offers an unexpected and refined taste experience. The taste combines the caramel-sweetness of thistle with the gentle and subtle warmth of artichoke hearts. Perfect for lovers of fine and distinctive milder flavours.

Pairing: Delicious in everyday use, it pairs exceptionally well with very strong and mature cheeses.

Safety Warning: Honey should not be given to infants under 12 months of age.

Storage: Store honey at room temperature, ideally between 18-22 Celsius.
