About Premium Fir Honeydew Honey: Mountain-fir honeydew honey from the Northern Carpathians, made by bees harvesting honeydew from fir needles and the bark of fir trees. Honeydew honey is superior to flower honey due to its high mineral and amino acid content and antimicrobial activity. A mouthwatering, rich honey with an intense burst of freshly lit incense yielding notes of sandalwood and cedarwood. The taste resolves to a sweet fir-resin somehow interpolating the flavour of a homely fireside Christmas. Long aromatic finish with a bittersweet hint of pine balm.

Pairing: A treat on fresh bread or toast, and hot scones. It is an excellent addition to tea or coffee, or to create a bit of sweetness to various savory dishes like caramelized chicken or duck.

Benefits	Pure honey is naturally high in antioxidants derived from nectar. Typically, 82% sugars (glucose and fructose), 18% ‘B’ vitamins and minerals. Raw honey is unheated during processing to avoid damaging these delicate, nutritious compounds which support a healthy immune system.
Storage	Honey is ideally stored at room temperature (around 18-22 Celsius) and need not be refrigerated to preserve it in top condition for up to two years. Exposing honey to temperatures above 35 C (hive temperature) from the sun or other heat sources can damage vitamin content and flavour, so please store out of direct sunlight and away from radiators. All natural honey will begin slowly to crystallise after a period of time dependent on its aromatic content. It can be used semi-set in the same way as when clear, but if you wish to return its clarity, place in a warm cupboard at 30-35 C and over a few days it will clarify.
