Forest Honeydew & Wildflower Honey – Award-Winning, Raw & Treatment-Free Mountain Honey

Product Overview

Our Forest Honeydew & Wildflower Honey is a premium, award-winning variety harvested from the high-altitude forests of the Carpathian Mountains. This unique harvest is wild-foraged from a combination of mountain wildflower nectar and the mineral-rich honeydew found on forest trees. It is a natural, small-batch honey known for its dark amber colour and high antioxidant content.

Taste

From forest honeydews of fir, beech, ash and oak trees with wild floral nectars found in a mountain nature reserve this has dark muscovado undertones, fresh-split beechwood and pine nuts with a trace of oak-leaf bitterness; long, warm finish.

Great Taste Award-Winning Honey

This honey has been recognised with a Great Taste Award, judged by culinary experts for its outstanding flavour, texture and balance. The honey’s rich, malt-like forest notes combine beautifully with soft, floral wildflower undertones, delivering a layered taste profile that’s both robust and refined — perfect for honey lovers and gourmet palates.

Here’s what the Great Taste Awards judges thought about the Forest Honeydew & Wildflower Honey:

“Attractively presented, this honey has a deep rich caramel colour. It has depth of flavour with an initial sweetness developing into a richer flavour sensation with the dark muscovado notes coming through.”

“This has a clear golden syrup-like colour but is viscous to pour. There is a fresh spicy aromatic note to the flavour which is quite unusual and interesting, it has a nice complexity and sweet finish.”

“We really enjoyed the deep muscovado sweetness of this honey, which had a glorious golden glow to it. It had a pleasant warm finish and we could definitely taste the provenance of all the ingredients. Delicious.”

Our Production Standards

We utilize traditional artisan methods to ensure that every jar of Forest Honeydew & Wildflower Honey reaches you in its most pure, raw state.

  • Raw & Unpasteurized: Our honey is not heat-treated. Keeping it unpasteurized protects the deep, woody aromas and the complex nutritional profile of the forest harvest.
  • Cold-Extracted: Our beekeepers use a cold-extracted method to remove the honey from the comb. This process ensures the living enzymes, minerals, and original pollen remain preserved and undamaged.
  • Treatment-Free: Our bees forage in chemical-free mountain landscapes. Our beekeepers follow treatment-free beekeeping practices, ensuring no synthetic chemicals or antibiotics are used within the hives.
  • Small-Batch & Sustainable: Every harvest is a limited small-batch run. Our process is bee-friendly and sustainably harvested, prioritizing the health of the colony by only collecting the surplus honey.

Pairing

Forest Honeydew & Wildflower Honey is a versatile gourmet ingredient:

  • Drizzle over pizza, meats, cheeses, porridge, granola or yoghurt
  • Sweeten tea, coffee or herbal infusions naturally
  • Pair with artisan cheeses for rich contrast
  • Use in dressings, marinades and glazes
  • Spread on fresh bread or warm pastries

Additional information

Ingredients

100% Pure Organic Forest Tree Liquor and Wildflower Honey

Flavour

The Flavour is not very strong. Can be smelled a light flavour of resin, when you are opening the jar.

Benefits

Pure honey is naturally high in antioxidants derived from nectar. Typically, 82% sugars (glucose and fructose), 18% ‘B’ vitamins and minerals. Raw honey is unheated during processing to avoid damaging these delicate, nutritious compounds which support a healthy immune system.

Storage

Honey is ideally stored at room temperature (around 18-22 Celsius) and need not be refrigerated to preserve it in top condition for up to two years. Exposing honey to temperatures above 35 C (hive temperature) from the sun or other heat sources can damage vitamin content and flavour, so please store out of direct sunlight and away from radiators. All natural honey will begin slowly to crystallise after a period of time dependent on its aromatic content. It can be used semi-set in the same way as when clear, but if you wish to return its clarity, place in a warm cupboard at 30-35 C and over a few days it will clarify.
