The flavour is immediately complex and exciting, the judges liked the leafy freshness, the hint of citrus and the burst of spearmint on the tongue. The finish is fresh and clean. A good example of linden honey with all the typical aromas and flavours of the type. The fine, granular texture added interest and gave a refreshing note to the flavour. We really enjoyed the buttery aspect of the flavour too, the slight bitterness, and touch of acidity that mitigated the sweetness and delivered a fresh mouthfeel. Judges all enjoyed the strong, refreshing hint of spearmint freshness too.This is uniquely distinctive honey that promises and delivers the aromas and flavours of a blooming linden tree. The floral syrupy flavour of the honey is accentuated by a hint of lime followed by notes of mint – truly delicious.
