2024 Award-Winning Collection
Seven rare mountain honeys and our artisan honey vinegar recognised by the Guild of Fine Food's expert panel - a landmark year for Honey Hills.
Wild Thistle Blossom Honey
Richly golden and crystal clear, with a discretely elegant floral nose and butterscotch depth.
"Soft and silky with lifted floral freshness on the long and lingering finish."
Wild Mountain Acacia Honey
Intense sweetness that quickly develops unexpected complexity with captivating rich tones of wheat germ and sunflower kernels.
"Beautifully perfumed and elegant in flavour, this honey is rich and complex with a floral sweetness that carries through to the finish. "
Wild Cherry Blossom Honey
The delicate sweetness develops rosehip and split cherrywood undertones with well-rounded cherry fruit and an unusually long finish.
“The judges loved the delicate cherry fragrance of this unusual honey."
Acacia & Orchard Blossom Honey
Initially delicate, the sweetness quickly develops strength, bringing in honeycomb undertones and a fine fruit finish.
“This light coloured honey has a rather savoury aroma. The flavour delivers some lovely honeycomb notes and a real sweetness on the palate. We could see that it would work well in dishes.”
Forest & Wild Raspberry Honey
The intense sweetness explodes with tart raspberry and the subtlest hint of vanilla, settling to a deliciously warm, raspberry-leaf, finish.
“This has an interesting duo of origins. Initially, we found intense sweetness, with a rounded vanilla character as suggested, and were searching for the raspberry note. On second taste, a tinge of acidity and aroma suggestive of raspberry did appear and helped to balance the deep sweetness.”
Acacia, Hawthorn & Maple Blossom Honey
This honey has a sweetness that develops rapidly yielding a maple flavour with overtones of toffee and vanilla, leading to a long, fine, toffee finish.
"It has notes of maple and toffee with a pleasant toffee aftertaste. It has a smooth consistency and is moreish. Its provenance is impressive.”
Forest Honeydew & Wildflower Honey
From forest honeydews of fir, beech, ash and oak trees with wild floral nectars found in a mountain nature reserve this has dark muscovado undertones, fresh-split beechwood and pine nuts with a trace of oak-leaf bitterness; long, warm finish.
“We really enjoyed the deep muscovado sweetness of this honey, which had a glorious golden glow to it. It had a pleasant warm finish and we could definitely taste the provenance of all the ingredients. Delicious.”
Premium Artisan Honey Vinegar
“This honey vinegar had a pleasing vinegary aroma and the flavour was well balanced between the acidic hit from the vinegar followed by a mellow roundness from the honey. This product is well made; it would be very versatile, but particularly ideal in a salad dressing.”
How to enjoy each honey
A pairing guide
Dwarf Acacia Honey - Delicate & light
Best enjoyed where its delicate sweetness can shine without competition. Spread generously on warm croissants or brioche, drizzle into Earl Grey tea, pair with creamy brie or camembert, or use as a natural sweetener in cocktails and cordials.
Plum Blossom Honey - Bold & bittersweet
Made for moments that deserve something special. Swirl into plain yoghurt or overnight oats, pair with aged cheddar or manchego, spoon over vanilla ice cream, or stir into cocktails where you want depth and fruit. Its granular texture makes it extraordinary on warm wholemeal toast.
Fir Honeydew Honey - Deep & resinous
A honey for the adventurous palate. Use to glaze roasted duck or lamb, stir into aged whisky or dark rum, pair with a strong blue cheese or smoked charcuterie board, or simply enjoy neat from a teaspoon beside a winter fire. This is the honey that changes how you think about honey.
Sourced from the wild heart of Romania
Every honey comes from remote, protected regions of Romania, where bees forage on pristine wild flora entirely free from intensive agriculture.
Honey Hills works with small-scale beekeepers who use traditional, treatment-free methods, harvesting only the surplus honey and leaving the colony what it needs to thrive. All honeys are unpasteurised and cold-filtered, arriving in your hands as close to straight-from-the-hive as possible.
