Here at Honey Hills, we take immense pride in sourcing the finest nectars, and today, we are absolutely delighted to shine a spotlight on the two most prized, and arguably rarest, treasures in our collection: our Premium Plum Blossom Honey and our Wild Cherry Blossom Honey.

Single-origin honeys

Hailing from the pristine, untouched landscapes of the Carpathian Mountains, these single-origin, Great Taste Award-winning honeys are the epitome of fleeting spring beauty captured in a jar. Because they rely on the very first blossoms of the year, their harvests are astonishingly limited. Let us take you on a tasting journey through these two exceptional pots of gold.

Both our Plum Blossom and Wild Cherry Blossom honeys are raw, unfiltered, and entirely unpasteurised. By eschewing heat treatments, we ensure that every jar retains the vital enzymes, antioxidants, and delicate floral aromas as nature intended.

Because of their seasonal constraints, neither of these honeys stays on our shelves for very long. If you fancy elevating your pantry, or perhaps gifting an authentic taste of a Carpathian spring to a fellow foodie, we highly recommend securing a jar whilst the season’s harvest lasts.

An important note on availability: Due to an unusually harsh climate early last year, we were unable to harvest any crop of these two exceptional honeys in 2025. As a result, our current stock is exceedingly limited.

Plum Blossom Honey: A Masterclass in Complexity

There is something inherently romantic about a honey that is so fiercely guarded by nature. Our Plum Blossom Honey is a true rarity, and for good reason. Plum trees bloom spectacularly early in the spring, a time when our bees are only just emerging from their long winter slumber. Understandably sleepy and depleted in numbers, the bees need the lion’s share of this early nectar to nourish their new brood. Consequently, we only ever harvest a very small surplus, making this honey incredibly sought-after.

Tasting Notes

Aesthetically, it is a lightly golden delight with an inviting, slightly thick viscosity and a charmingly granular texture. On the palate, it delivers an instant, bold cherry-plum richness that effortlessly climbs to a pitch of plum-blossom bittersweetness. As it settles, it reveals a remarkably rounded, long-lasting finish, boasting notes of sweet prune and perfumed citrus.

The Great Taste Award judges were rather enamoured with it, praising its “perfumed citrus notes” as a “total joy,” and noting how its unique texture beautifully enhances its “richly floral” profile, complete with a “hint of earthiness”.

How to Enjoy It

Its beautifully dense, fruity profile makes it an incredibly versatile companion in the kitchen. Drizzle it generously over a bowl of morning porridge, spread it atop a slice of warm, fresh wholemeal bread, or use it to bring an elegant depth to your favourite cocktail.

Wild Cherry Blossom Honey: Delicate Elegance

Equally elusive is our Wild Cherry Blossom Honey. Like the plum blossom, the nectar flow for the wild mountain cherry tree is tantalisingly brief. Timing is absolutely critical for our beekeepers, who set their hives amongst the cherry trees specifically for this fleeting white bloom. Authentic cherry blossom honey - not to be confused with artificially infused alternatives, is a rare, mono-floral masterpiece, produced in strictly limited, small-batch quantities.

Tasting Notes

Presented in a glowing, golden hue, this honey is heralded for its refined, delicate sweetness. The Great Taste Award judges marvelled at its “pleasant fruity notes” and “smooth mouthfeel,” praising its multifaceted flavour. It is not overly sweet, but rather exquisitely balanced, developing lovely rosehip and split cherrywood undertones. Expect a well-rounded cherry fruit flavour accompanied by a sweet and savoury finish that leaves lingering hints of cherry stone and crunchy almonds. Truly, it is dangerously moreish.

How to Enjoy It
