Sourced from wild Dorycnium blossoms blooming across sun-drenched hillsides, this exceptionally rare single-origin Romanian honey is known affectionately in traditional beekeeping lore as “the little Jesus in velvet pants” for its supremely soft, soothing mouthfeel.
Taste & Texture
The honey presents a pale golden to soft yellow clarity with a creamy to pasty, melt-in-the-mouth consistency as it crystallises. On the nose, it offers a delicate and subtle floral aroma with herbal nuances reminiscent of wild rosemary. The taste is sweet, fruity, penetrating, and remarkably lingering on the palate.
Raw, Unfiltered & Rare Floral Harvest
Our raw Silver Lotus Honey is unfiltered and completely natural, preserving all of its natural enzymes, floral aromas, and wholesome goodness. Harvesting Dorycnium honey is a rare and climate-dependent process that relies heavily on late-season rainfall across wild hillsides where the low-growing Dorycnium subshrubs flower. This unpredictability makes it one of the rarest, most sought-after single-origin honeys.
Sought after by honey lovers for its exquisite balance, this rare variety offers a delicate alternative to intense dark honeys, providing an exceptionally smooth taste experience.
Pairing
A treat when spread over baked Camembert, fresh warm brioche, artisan sourdough, or hot toast. It makes a delightful addition to your morning porridge, Greek yoghurt, or fresh fruit bowls.
Silver Lotus Honey is wonderfully versatile and adds character to many dishes:
Drizzle over porridge, Greek yoghurt, or fresh fruit.
Sweeten herbal teas or warm infusions without overpowering delicate flavours.
Pair with soft goats’ cheese, ricotta, or fresh cheeses for a gourmet contrast.
Enjoy straight by the spoon for a smooth, natural treat.
Ideal as a natural sweetener, everyday pantry favourite or artisan gourmet gift.

Crystallisation & Storage
All natural raw honey will slowly crystallise over time. Dorycnium honey naturally tends toward a medium-to-fine, creamy or pasty crystallization due to its floral composition.
If you prefer a more fluid clarity, gently warm the glass jar in a warm water bath (30–35 °C) to return it to a liquid state without damaging its raw nutritional properties.

Benefits
Pure honey is naturally high in antioxidants derived from nectar. Typically, 82% sugars (glucose and fructose), 18% ‘B’ vitamins and minerals. Raw honey is unheated during processing to avoid damaging these delicate, nutritious compounds which support a healthy immune system.
Storage
Honey is ideally stored at room temperature (around 18-22 Celsius) and need not be refrigerated to preserve it in top condition for up to two years. Exposing honey to temperatures above 35 C (hive temperature) from the sun or other heat sources can damage vitamin content and flavour, so please store out of direct sunlight and away from radiators. All natural honey will begin slowly to crystallise after a period of time dependent on its aromatic content. It can be used semi-set in the same way as when clear, but if you wish to return its clarity, place in a warm cupboard at 30-35 C and over a few days it will clarify.
