Mountain Rosebay Honey (227g)

Our Mountain Rosebay Honey is from the nectar of the beautiful pink flowers of rosebay willowherb growing at altitudes of 1300m-1500m in the Carpathian Mountains. The bees only collect this nectar in optimal climatic conditions, which makes it somewhat rare, to produce a fine, light honey, with a unique floral aroma and a pleasant, sweet aftertaste. Known as the “champagne of honeys” due to its colour and mild flavour yielding distinctive vine-fruit notes, as well as its smooth viscosity.

Description

Mountain Rosebay — Raw, Treatment-Free Honey | Wild-Foraged & Small-Batch

Product Overview

Often referred to as the “Champagne of Honeys” due to its light colour, smooth viscosity and distinctive vine-fruit flavour, our Mountain Rosebay Honey is a rare, single-origin mountain variety. It is wild-foraged at high altitudes between 1300m and 1500m in a Carpathian Mountains Nature Reserve. This natural honey is highly dependent on specific climatic conditions, making it a prized small-batch harvest.

Our Production Standards

We utilize traditional artisan techniques to ensure the honey retains its premium quality and integrity.

  • Raw & Unpasteurized: This honey is never heat-treated. By keeping it unpasteurized, we protect the delicate “vine-fruit” notes and the natural nutritional enzymes.
  • Cold-Extracted: Our beekeepers use a cold-extracted process to remove the honey from the comb. This method preserves the antioxidants and original pollen count found in the wild mountain flora.
  • Treatment-Free: Our hives are located in chemical-free mountain environments. Our beekeepers follow treatment-free beekeeping practices, ensuring no synthetic chemicals or antibiotics are used.
  • Small-Batch & Sustainable: Each jar is part of a limited small-batch run. Our process is bee-friendly and sustainably harvested, prioritizing the health of the colony by only taking surplus honey.

Pairing

An always-reliable honey, Mountain Rosebay Honey is versatile and delightful in a range of culinary uses:

  • Drizzle over porridge, yoghurt, granola or fresh fruit
  • Delicious when spread thickly on buttered, freshly baked white bread
  • Sweeten tea, herbal infusions or hot drinks naturally

100% Organic Mountain Rosebay Honey

Benefits

Pure honey is naturally high in antioxidants derived from nectar. Typically, 82% sugars (glucose and fructose), 18% ‘B’ vitamins and minerals. Raw honey is unheated during processing to avoid damaging these delicate, nutritious compounds which support a healthy immune system.

Storage

Honey is ideally stored at room temperature (around 18-22 Celsius) and need not be refrigerated to preserve it in top condition for up to two years. Exposing honey to temperatures above 35 C (hive temperature) from the sun or other heat sources can damage vitamin content and flavour, so please store out of direct sunlight and away from radiators. All natural honey will begin slowly to crystallise after a period of time dependent on its aromatic content. It can be used semi-set in the same way as when clear, but if you wish to return its clarity, place in a warm cupboard at 30-35 C and over a few days it will clarify.
