The Fir Honeydew is produced not from flower nectar but from honeydew collected off fir tree bark and needles – a process that yields a darker, mineral-rich honey with an unmistakable resinous depth. Think incense, sandalwood and a long Christmas fireside finish. The Mountain Sumac is its opposite: light, citrus-bright and floral, with an evolving arc from lime zest through lemon to a lingering elderflower close. It is so rare that it is harvested in limited quantities from a single mountain location only in years when conditions are right.

Fir Honeydew Honey
Fir Honeydew Honey from the Northern Carpathians, made by bees harvesting honeydew from fir needles and the bark of fir trees. Honeydew honey is superior to flower honey due to its high mineral and amino acid content and antimicrobial activity. A mouthwatering, rich honey with an intense burst of freshly lit incense yielding notes of sandalwood and cedarwood. The taste resolves to a sweet fir-resin somehow interpolating the flavour of a homely fireside Christmas. Long aromatic finish with a bittersweet hint of pine balm.

This honey is very rare and in limited quantities because it relies on ideal flowering conditions which occur only during years with extended favourable weather.
