Description

Forest Honeydew Honey – Raw Honey from the Rodna Mountains

Product Overview

Discover Forest Honeydew Honey, a premium quality honey, produced by bees from the secretions of aphids found on the bark of coniferous trees (particularly fir), in the Rodna Mountains. Honeydew honey is a complex, valuable, and very rare variety, produced by bees during the summer months—but only in years when rainfall in the mountainous areas remains within specific limits.

Taste

Mountain forest honey from fir tree honeydews is collected only during unusually dry summers when no floral nectar is available. It is intense, rich and bitter-sweet, with wheatgerm, buckwheat and tannic tones resolving to a resinous woody finish.

Our Production Standards

We utilize traditional artisan methods to ensure that every jar of Forest Honeydew Honey reaches you in its most potent, raw state.

  • Raw & Unpasteurized: Our honey is never heat-treated. Keeping it unpasteurized protects the deep, malty aromas and the vital nutritional enzymes found in the forest sap.
  • Cold-Extracted: Our beekeepers use a cold-extracted method to remove the honey from the comb. This process ensures the living enzymes, antioxidants, and original forest pollen remain preserved.
  • Treatment-Free: Our bees forage in chemical-free mountain landscapes. Our beekeepers follow treatment-free beekeeping practices, ensuring no synthetic chemicals or antibiotics are used within the hives.
  • Small-Batch & Sustainable: Every harvest is a limited small-batch run. Our process is bee-friendly and sustainably harvested, prioritizing the health of the colony.

Pairing

Dark amber in colour, forest honey has a deep, toffee flavour and works wonderfully on pastries, toast or drizzled on yoghurt.

Forest Honeydew Honey complements a wide range of foods:

  • Drizzle over porridge, granola or yoghurt
  • Stir into tea, coffee or herbal infusions
  • Pair with cheese boards, especially mature or blue cheeses
  • Use as a natural sweetener in dressings, sauces and glazes
  • Spread on fresh bread and warm pastries

Perfect as a natural sweetener, everyday pantry favourite or artisan gourmet food gift.

Additional information

Ingredients

100% Pure Organic Forest Tree Liquor Honey

Flavour

Full-bodied flavour with a silky smooth, thick consistency. It has a distinct and intense aroma of woods, with fresh accents,, characteristic of forest honey. Is less sweet than other honeys.
Lovely with with dry, smoked cheeses.

Benefits

Pure honey is naturally high in antioxidants derived from nectar. Typically, 82% sugars (glucose and fructose), 18% ‘B’ vitamins and minerals. Raw honey is unheated during processing to avoid damaging these delicate, nutritious compounds which support a healthy immune system.

Storage

Honey is ideally stored at room temperature (around 18-22 Celsius) and need not be refrigerated to preserve it in top condition for up to two years. Exposing honey to temperatures above 35 C (hive temperature) from the sun or other heat sources can damage vitamin content and flavour, so please store out of direct sunlight and away from radiators. All natural honey will begin slowly to crystallise after a period of time dependent on its aromatic content. It can be used semi-set in the same way as when clear, but if you wish to return its clarity, place in a warm cupboard at 30-35 C and over a few days it will clarify.
