What is honeydew honey?
Unlike most honey, which bees produce from flower nectar, honeydew honey comes from a completely different source. It begins with honeydew – a sweet, sticky substance secreted by plant-feeding insects such as aphids and scale insects as they feed on tree sap. Bees collect this honeydew from the leaves and bark of trees and transform it into honey through the same enzymatic process they use with nectar.
The result is a honey that is darker, richer, and far more complex in flavour than floral varieties. Depending on the tree species involved – fir, pine, oak, or linden – the character of the honey changes dramatically.
How does honeydew honey taste?
Honeydew honey has a depth that floral honeys rarely achieve. Expect notes of caramel, dark toffee, malt, and resin, often with a subtle woody or herbal finish. It is less sweet than acacia honey, with a longer, more lingering aftertaste.

Honeydew honey is generally considered to have a higher mineral and antioxidant content than most floral honeys. Studies have noted elevated levels of potassium, magnesium, and polyphenols. It also tends to have stronger antibacterial properties, largely due to its higher enzyme content and lower water activity.
Like all raw, unpasteurised honey, honeydew honey retains the full spectrum of natural enzymes, pollen traces, and beneficial compounds that heat-treated commercial honey loses during processing.
Where does the best honeydew honey come from?
The Carpathian Mountains – stretching through Romania, Ukraine, and Slovakia – are widely regarded as producing some of the finest honeydew honey in the world. The forests here are old-growth and largely untouched by intensive agriculture, giving bees access to pristine woodland ecosystems with exceptionally biodiverse plant and insect life.

Pine honeydew honey, sourced from high-altitude pine forests, is often lighter in character – buttery and smooth, with hints of toffee and a cooling menthol finish.
